Broccoli and blue cheese soup

Beautiful green soup! You only need a very small amount of good blue cheese to bring out the flavour

Method

Cook the leeks and garlic in oil in a large pot on medium heat until it smells great and the leeks are soft
season
Add up to a litre of chicken stock (depending on how many your cooking for)
Bring to the boil
Add broccoli flowers
Cook for a further 5-10mins
Remove from heat
Use a stick blender in the pot (to save washing up) and blend until desired consistency
stir through blue cheese
serve with flat leaf parsley, a squeeze of lemon and warm crusty sourdough

  • 1 x leek
  • 3 x Broccoli heads
  • Chicken stock
  • Salt & Pepper
  • 2 x slices of blue cheese
  • Flat leaf parsley
  • Lemon

oooh i love this but i've never used a leek or lemon, i'm trying it asap
