Soft boiled egg with watercress and sprouts

I felt like something super healthy this morning, the bitterness of watercress, the goodness of free-range organic eggs and the vitality of mung bean sprouts make for a super charged ultra healthy breaky.
Method
Place eggs in warm tap water in a bowl while you boil water to get them to room temp.
Time them in the boiling water for exactly 5 mins.
Pour the boiling water over the watercress to soften and wilt slightly, then quickly run the eggs under cold water to shock them. Peel them quickly, place them on a bed watercress and top with sprouts.

- one organic free-range egg per person
- handful of watercress per person
- handful of bean sprouts per person
