Basil and ricotta spag bowl
I use a mixture of pastas including torn lasagne sheets and also drain the mince meat which makes it feel cleaner...
Method
Brown off mince meat in a non stick pan
Add a cup of boiling water and boil for a minute
Then drain everything before returning meat to pan
Add 2 x grated carrots and finely sliced celery
add onions and garlic
combine then add beef stock, cover and cook for 10 mins
Add splash of red wine, tomatoes and paste and let it simmer for 40 mins till thick and rich
Cook pasta and serve tossed with fresh ricotta, basil and grated parmesan.

- 500gs lean mince meat
- 2 x grated carrots
- 1 x celery stick finely sliced
- beef stock
- onion
- garlic
- red wine
- 2-4 tins of tomatoes
- tomato paste
- salt and peper
- generous handful basil leaves
- ricotta
- pasta (lasagne sheets and spaghetti)
- parmesan
