Tunisian Lamb Burgers with Cucumber, Mint and Yogurt Sauce

Delicious, so simple to prepare with pita bread and vegetables, perfect with harissa.

Method

In a bowl, place the yoghurt, garlic clove, english cucumber, mint and salt. Mix well and keep it refrigerated until you're ready to use it.

In a large bowl place the onion, meat, garlic, ginger, tomato paste, allspice, cayenne pepper, salt and pepper, mix well together.

Add the parsley and raisins and mix until well combined.

Divide the meat in 6 equal balls and make flat patties from around 12 cm in diameter and 1 cm thick .

Set the patties in the fridge and let them chill and firm before placing in the grillpan.

Grill the patties for around 8 minutes per side or until cooked through.

Serve the burgers on the pita bread, topped with tomato, onion, parsley, cucumber and the sauce (we added some harissa sauce too).

Ingredients

  • For the Burgers:
  • •Ground lamb, 1 kg
  • •Garlic cloves (minced), 2
  • •Yellow onion (grinded), 1
  • •Tomato paste, 1 tbs
  • •Ground ginger, 1/4 tsp
  • •Allspice, 1/2 tsp
  • •Cayenne pepper, 1/2 tsp
  • •Sultana raisins, 1/2 cup
  • •Parsley (chopped), 1/3 cup
  • •Salt
  • •Pepper
  • For the Cucumber Mint Yoghurt Sauce:
  • •Yoghurt, 1 1/2 cup
  • •Garlic clove (minced), 1
  • •English cucumber (grated), 1/2
  • •Dried mint, 1 tbs
  • •Salt
  • For serving:
  • •Pita or flatbread, 6
  • •Sliced tomato (we used cubed)
  • •Sliced red onion
  • •Fresh chopped parsley
  • •Cucumber sticks (not in the original recipe)
