Anillos Livianos de Maíz

Biscuits as light as tempting. These delicious gluten-free rings. Perfect for the weekend.
Method
Sift into a bowl the corn and cassava starch, baking soda and cream of tartar.
Add the sugar and butter and mix well with the fingertips.
Add the eggs, one at a time, mixing well after each addition, until a dough forms.
Roll out the dough with a rolling pin on lightly floured surface until it is 1 cm thick.
With a cookie cutter cut out cicles of 6 cm in diameter.
In each of these circles with a smaller cutter cut 3 cm in diameter, in the center of the circle to form a ring.
Repeat the procedure with the rest of the dough.
Place the rings on a baking sheet sprayed with cooking spray and sprinkled with cassava flour.
Bake in preheated oven at moderate temperature (around 200 º C) for 15 minutes.
Remove, let cool on a wire rack and sprinkle with the confectioner's sugar.

- •Sugar, 175 gr
- •Butter, 120 gr
- •Eggs, 2
- •Vanilla extract, 1 tsp
- •Confectioner's sugar (for dusting), (we ommited this)
