Method

Pre-heat your oven to about 250ÂșC and put the beets on a baking tray with the salt and oil. Bake for 40 mins. When cooled you can remove the skin. But you actually don't need to if the beets are washed.

Wash the soaked beans and bring to boil with enough water to cover. Add in the chopped onions, the whole dried chile and garlic cloves. Simmer for a few hours until they are really soft, you will need to keep adding water. Put through a blender with the water and then re-fry for a few minutes. Add some salt if you need to.

Serve with steamed rice the baked beets and a good home made hot sauce.

  • 500gms black beans soaked overnight
  • teaspoon salt
  • white onion
  • 4 x garlic cloves
  • 1 dried poblano chile
  • 6 small beets cut into qtrs
  • teaspoon salt
  • dash of oil
  • 1 cup rice
  • 2 cups water
  • dash of salt
