Prosciutto-Wrapped Salmon with Pesto Potatoes!
I found a recipe for Prosciutto Wrapped Salmon a long time ago and always was intruiged.. salty prosciutto... delicate Salmon..? But it works! I added some pesto potatoes to add a bit of an Italian twist, and some extra vegies for health!
So easy, healthy and delicious!
Method
Coat a baking tray with oil pre heat your oven and pop on some water for the potatoes!
Rub the Salmon fillets with salt, pepper and oil. place chopped garlic on the top side, and carefully wrap with proscuitto. Lay thinly sliced lemons on the top. A little extra oil if you like to stop any drying out..
While that is roasting in the oven, pop in the tray the mixed cherry toms. Can be same tray or different, but I like same tray, makes all the flavours meld together.
Meanwhile, boil your potatoes until they can be peirced with a knife. You can then keep warm with the lid on while you get the rest togther- always drain water as they will turn to mush! Mix through the pesto while still hot. Taste and maybe salt and pepper. Bought pesto's can lack seasoning...
If using asparagus and/or spinach, cook both very briefly using your prefered method. I like to steam!
Pop salmon on top of spinach, and lay other vegies and potatoes along side! YUM!
Ingredients
- Salmon fillets, skinned. 1 per person
- Sliced Prosciutto, 2 per salmon fillet
- Garlic, chopped
- Sliced lemon
- Olive Oil
- Salt and Pepper
- New Potatoes, or any waxy kind cut into pieces
- Pesto- can make your own, but a good bought one will do
- Mixed Cherry Tomatoes (any kind is fine, but mixed colours look amazing!)
- Asparagus or Spinach, or both! Optional Sides
