Guatemalan Pupusas
These are Guatemalan quesedillas. Corn meal flour made into a ball with cheese inside then flattened out again and fried. Superb and making them is a party in itself.
Method
Mix the maseca in your hand with the water until you make a kind of paste - much more wet than any kind of dough.
Wet your hands and grab some of the mix and make it into a ball, then start patting it in a circle shape around your hands. When it is flat place some cheese in the centre and close it back up into a ball. Then repeat the flattening process again, it doesn't need to be too flat. But nice and round.
Fry in some light oil for 3 mins each side and serve with salsa.

- 1 cup maseca
- water
- any kind of cheese, we used Oaxacan style in this one which is like mozzarella but with more flavour
- salsa to serve
