My Zupe Di Moules

My version of a recipe straight from Elizabeth David's "Mediterranean Food" called "Zuppa Di Pesce". Remembering what it is like to cook from a recipe with no pictures is oh so fulfilling.

Method

heat the olive oil over medium heat
add the onions and cook for a few minutes
add parsley and garlic and cook for another minute or two
add fresh and tinned tomatoes and allow to cook for 5-10 minutes
add mussels and cook with lid on to steam until all mussels are opened, about 3 minutes or so.
serve immediately in large bowls with fresh parsley crusty garlic bread.

Ingredients

  • 1kg of fresh cleaned and bearded black mussels
  • 1 onion finely diced
  • 1 garlic clove finely sliced
  • 2 big fat juicy tomatoes that have been skinned and chopped
  • 1 tin crushed italian tomatoes
  • 1/2 bunch parsley
  • 50ml olive oil
