Salty Cheese Omelette

A guy came to our house this morning to sell fresh Panela, an amazing salty cheese that is like half fetta and half ricotta.
We had some whisked eggs left over from the pacaya fritters so we made a quick omelette with the panela. This is very moorish.

Method

Whisk the egg whites till stiff then fold in the yolks. Heat some oil in a pan and place the mixture into hot oil. Add the panela and then fold over the egg into an omelette.

Ingredients

  • 2 eggs seperated
  • 2 tablespoons panella
  • oil for frying
