Palm Flower Fritters, Pacaya con huevos

I found this strange veg in the market today but its actually a fruit, it is the initial blossom of a variety of date palm. It looks like a bunch of baby sweet corn. Its an amazing looking thing and has a slight bitter taste to it. The woman at the markets was very excited that I was going to cook it myself and went to great lengths to describe how to make it. Luckily Juanita was home when I got back to show me how.

Method

Remove the hard roots of the flower and cut in half down the centre. Boil for half an hour in some salted water.

Whisk the egg whites till soft peaks form and then fold in the yolks to make a nice batter. Dip the pacaya into the batter and shallow fry in some oil.

Serve with salsa verde.

Ingredients

  • 3 x fresh pacaya
  • 4 eggs separated
  • pinch of salt
  • oil for frying
