Lemon Meringue Cupcakes

Tricked out cup cakes, man these are EASY.

Method

Begin with the curd. Put the butter and lemon juice in a saucepan on a medium heat until the butter melts. Still on heat whisk in eggs and sugar until shiny. Set aside to cool.

Next cup cakes. Preheat oven to 180c and grease 6x muffin moulds. Whisk sugar, cream and egg in a mixing bowl until combined.Slowloy sift in flour and baking powder and zest until mixed. Spoon mixture into six moulds and bake for 10-15 mins until ready. Leave to cool.

Meringue. Use electric beater to whip eggs, slowly mixing in sugar until soft peaks form. Don't go too hard with it as you still need to have it soft enough to pipe on to the top.

To Combine. Cut a deep cone in the cup cake, spooning curd in to each one. Pipe meringue on the top. Put em all under the grill until the meringue gets a nice brown thingo. ONLY 60 SECONDS THOUGH OR ELSE OH OH.

  • 3/4 cup plain flour
  • 1/2 cup caster sugar
  • 1/2 cup cream
  • 1 egg
  • Zest of 1 lemon
  • 1 tsp baking powder
  • Lemon Curd
  • 1/4 cup caster sugar
  • 1/4 cup lemon juice
  • 50gm butter
  • 1 egg
  • 2 egg yolks
  • Meringue
  • 2 egg whites
  • 1/4 cup caster sugar
