Apple Tart

I stole this from a Neil Perry recipe in the back of this weeks Good Weekend, but I tarted it up a bit. How can you tart a tart?
Method
Peel and core the apples and slice them up into 3mm lengths. Poach them for 20 mins in the coffee and spices with enough waer to cover. Drain well and set aside.
Place the sheet of puff pastry onto an oven tray and place in an oven at 200ÂșC for 10 mins or until it starts to puff up. Remove from the oven and squish back down with a tea towel. Arrange the apple pieces on the pastry and then cover with the sugar and place small knobs of butter over it evenly.
Bake for a further 25mins and then serve with some nutty flavoured ice-cream.

- one sheet puff pastry
- 4 apples
- 100gms butter
- 100gms sugar
- 1 x cinnamon stick
- 4 x cardamon pods
- 1 x star anise
- 2 tsp garam masala
- 1/2 cup black coffee
