Party pastry pizza with spinach and haloumi

This is inspired by Maggie Beers (again!) she made this pasty on her party show. And if you 'arrest' the patry like the recipe says you will ensure a winner.
Method
Slice your haloumi as fine as you can and set aside.
Get a slab of puff pastry out of your freezer and put on a greased oven tray. Bake for 10 min at 200ºC for about 10 mins or until you see it starting to puff. Take it from the oven and arrest it. Get a clean tea towel and place over the pastry to squish it back down. REmove from oven.
Put it back in the oven for a few mins.
Turn the oven up to 250ºC
Steam spinach leaves until wilted and drain and squeese all the water out.
Heat some oil in a pan and throw in the cumin seeds leave until the pop, then add in the sliced onion, cook for a further 2 mins.
Add in the dried out spinach and stir till blended.
Place over the pastry and put the haloumi on the top.
Cook at 250ºC for 10 mins.
