Smashed Parsnips with Horseradish

These are smashed rather than mashed as they are bit hard to squish through the masher, you have to smash 'em.

Method

Roast the parsnips in an oven on 220ÂșC for 40 mins.
Remove from the oven and then boil them for a further 20 mins - they are tough little suckers.
Drain and then smash them with the dairy and horseradish.
Serve with roast lamb.

Ingredients

  • 2 large parsnips
  • 1 tablespoon horsradish (from a jar)
  • 1 tsp butter
  • 1/4 cup milk
  • salt
