Quinoa and radish salad

Quinoa is easier and tastier and healthier than rice. If you haven't tried it you should get amongst it soon.

Method

Wash the quinoa well and then drain off the water. Use 2 parts water to one part quinoa. Bring to boil and simmer on low for 15 mins keep the lid on. Turn off the heat and let steam for a further 15 minutes with the lid on.

Slice the zucchini and garlic with a mandolin really fine or grate them. Heat some oil in a pan and fry the carraway seeds, add the garlic and zucchini and and keep stirring for a few minutes. It doesn't need long.

Slice the radishes with the mandolin also - or grate them.
Mix everything together.

Ingredients

  • 1 x cup quinoa
  • 3 red radish
  • 3 white radish
  • 3 zucchini
  • tsp carraway seeds
  • 6 garlic cloves
  • olive oil
