Chicken Quinoa 'n' Shitake
This is an easy fast recipe for those who cannot have dairy, gluten or sugar in their diet.
It is high protein and all the right kinds of fats from quinoa and coconut.
It is extremely tasty and extremely good for you!
Method
Cook quinoa in 2 cups of water until boiling and set aside to absorb.
Heat coconut oil in pan til melted, add chicken and mushrooms and cook on medium until mushrooms are soft - about 5-10 mins.
Squeeze lemon juice over chicken and mushrooms, stir occasionally, until chicken shows brown edges.
Add grape tomatoes, garlic, salt and pepper.
Simmer for 10mins until garlic has merged with the dish.
Sprinkle dashi on top of the dish, stir and simmer for a few more minutes until the dashi is absorbed.
Serve with quinoa and parsley.
Ingredients
- 1 tablespoon Extra Virgin Coconut Oil
- 1 Chicken thigh cut into thick slices
- 8 Shitake mushrooms
- 2 garlic bulbs
- Juice from 1 lemon
- 1 cup red quinoa
- 1/2 cup grape tomatoes
- 1/2 sachet of Dashi
- Parsely leaves, salt n pepper for seasoning
