Baked scalloped potatoes

Why do potatoes taste so good?
Method
Use a mandolin to slice the potatoes as thin as you can. Place in a caserole dish with some olive oil and thyme in the bottom.
If you are roasting some lamb use some of the juices to roast your potatoes in, otherwise just place in oven like this with some butter and salt.
Bake for 25mins or until soft at 200ÂșC
Serve with roast lamb
