Baked Rhubarb

I never know what to do with Rhubarb and it sits in the back of the fridge till it turns sour and I throw it out. It is super easy to turn it into something delicous, Maggie Beer showed me how yesterday.
Method
chop the ends off the rhubarb stalks and then chop roughly into 3cm lengths, place on the bottom of a small caserole dish with a lid, cover with the lime and sugar and put the tiny knob of butter in there.
Heat oven to 180ÂșC and cook for 15minutes. If the Rhubarb is old it will need slightly longer and probably more sugar.
Serve on your favourite muesli,
