Organic Carrot Omellette

Sweet organic carrots with big fat free range eggs for breakfast.

Method

Heat the butter in a pan and fry up the onions till soft, add in the carrots and cook till they are just soft, only a few minutes.
Whisk the eggs with the yoghurt and salt and add over the carrot mix. Let sit until its cooked on the bottom and then gently stir it around till cooked, remove from heat while still runny as it will keep cooking and you don't want dry eggs.

Serve on its own or with some toast.

Ingredients

  • one small onion finely sliced
  • one organic carrot finely sliced in a mandolin
  • 3 big fat organic free range eggs
  • big dollop of sheep's milk yoghurt
  • butter for cooking
  • salt

OvenBunny, I just finished eating a tweaked version of this after seeing your recipe yesterday. Pretty similar, just used regular milk, natural yoghurt and served on gluten-free toast. My oh my - what a taste! Great recipe! Thank you!
