Salt Crusted Beef
Beef cooked inside a pistachio pastry salt crust
Method
Beat the egg whites in a kitchenaid.with the whisk
Change the whisk for the hook, add the flour, pistachios, salt, pepper, water, and mix for 3-5 minutes
Wrap in cling wrap and leave for 2 hours.
Seal the tenderloin on a BBQ or Griddle, leave to rest.
Roll out the pastry mix, place the beef in the centre, and roll over the beef to seal.
Place in a preheated 210 degree oven and cook for 1 hour
Crack open and serve
Ingredients
- 2kg Beef Tenderloin
- 1kg white flour
- 250g ground pistachios
- 750g rock salt, ground or crushed to be about half size
- 8 egg whites
- 3 tablespoons pepper
- 1.5 cups water
- Cling wrap
