Cherry Muffins with white chocolate centre

White chocolate doesn't really melt so I had to just place a whole lump of it in the centre of these muffins. Gotta say, THEY ROCK!
Method
Sift flour into a mixing bowl with the sugar and baking soda, melt the butter and add to the mixture with the egg yolks and milk and cherries. Beat the eggwhites with the salt until they are stiff and fold into the mixture.
Grease some muffin trays and spoon in the mixture, place two or three pieces of white chocolate into the centre of the muffins and then bake at 180ยบ for about 20 mins or until brown on the top.
Serve upside down.
Ingredients
- 2 cups self raising flour
- 1/3 cup brown sugar
- 1 cup milk
- 3 eggs seperated
- 1 tin of pitted cherries
- 500gm block of white chocolate
- 150gms butter
- pinch baking soda
- pinch salt

A TIP! so that your fruit doesn't end up at the bottom of the muffin toss them in flour before hand, then they can stick with the batter and stay towards the top!
