Eggplant with cumin seeds and garlic

Quick, easy healthy snack.

Method

Slice your eggplant into rounds and cover with a bit of salt on each side for 10 mins, rinse well and dry with some paper towel. This removes the bitterness of the eggplant. Slice now into strips and also your carrot.
Heat oil in a pan and when hot place your cumin seeds in the hot oil. Wait till they start to pop. Throw in the garlic and fry for 2 mins, stirring constantly so it doesn't burn.
Add in your veg and cook until you like it, I like my eggplant a little crunchy in this dish so I don't leave it to get all soggy but you can if you like it like that.

Ingredients

  • one organic eggplant
  • 5 cloves organic garlic
  • one carrot
  • 3 teaspoons of cumin seeds
  • peanut oil
