Cous Cous Salad with figs, dates, apricots

When asked to take a salad to a picnic I always stress out about the rocket wilting or how to take the dressing. This salad is really easy and filling, is great cold out of the fridge or room temp and the more dressing the better and for longer.

Method

Make the cous cous by pouring one cup of boiling water into a saucepan with the cous cous, cover and leave.
Chop capsicums into small dices
Chop dried fruit
Chop up parsley and corriander
Toast the pine nuts lightly in a saucepan
Drain and rinse the chic peas
Throw everything into a big bowl
Pour in lots of olive oil and fresh lemon juice and pepper
Stir it up and eat it

Ingredients

  • 1 cup cous cous
  • 1 can cooked chic peas
  • small punch flat leaf parsley
  • small bunch of coriander
  • 1 tablespoon cumin
  • 1/2 red capsicum
  • 1/2 green capsicum
  • 3 dried figs
  • 4 dried apricots
  • 2 dates
  • 2 tablespoons pistachio nuts
  • 2 tablespoons pine nuts
