Easy Dahl

One for the cooler months coming up.

Method

Chop onion and fry off in two tabelspoons of vegetable oil.
Finely mince garlic, ginger, tumeric, chilli and coriander roots.
Add to onion and fry for about five minutes.
Add spice powders and fry until fragrant.
Add lentils and cover with water to about two inches over the top.
Tie the pandanus leaf in a knot and add to pot.
Bring to boil and cook on medium boil until lentils collapse.
Should take about 45 minutes.
Keep an eye on liquid level and add more if needed.
In a small fry pan, heat another tablespoon of oil.
When hot add mustard seeds and curry leaves.
As soon as mustard seeds start to pop, remove from heat and stir the lot into the lentils.
Be careful as the oil will spit when adding to the lentils.
Season with salt and pepper.
Add chopped tomato and a handful of coriander leaves to finish.
Serve with rice or roti.

  • 300 grams Yellow Lentils
  • I x Large Brown Onion
  • 3 x Garlic Cloves
  • Thumb Sized Piece of Ginger
  • Thumb Sized Piece of Tumeric
  • 1 small birdseye chilli.
  • 4 x Coriander roots
  • 2 x teaspoons Cumin Powder
  • 2 x teaspoons Coriander Powder
  • 4 Inch Pandanus Leaf (Optional)
  • 1 x Tablespoon Yellow Mustard Seeds
  • Quarter Cup Curry Leaves
  • 1 Large Tomato

What is a pandanus leaf and where do you get it?

Its a tropical plant leaf that is used more in south east asian cooking. Fairly easy to get from any Indian/Islander or Asian Grocery store. Sometimes sold frozen, it keeps well in the freezer. It adds a unique earthy flavour with the advantage of being very inexpensive and dead easy to use.

cooking this again tonight Adwok! although I didn't have coriander powder so I'm using stalks
