Refried Beans - The Dead Easy Way

No need to soak them beans!

Method

In large saucepan, cover beans with 4 cups of water.
Drain and chop chipotle - add to pot with soaking liquid.
Finely chop onion, garlic, birdseye chillies and coriander roots and add to pot.
Stir in dried spices.
DO NOT ADD ANY SALT at this stage otherwise the beans will stay tough.
Bring to boil and keep on a rolling boil for about 45 minutes - the beans will start to collapse around that time and the mixture should be quite thick.
Keep an eye on the water level and add more if required.
After about an hour, the beans will be soft and easy to mash with a potato masher or fork.
Season with salt and pepper.
Serve with tortillas and rice and all the fixin's.

  • 500 gms pinto, butter or great southern beans
  • 1 x chipotle chilies
  • 2 x birdseye chillies (optional)
  • 1 x medium onion
  • 3 x garlic cloves
  • 3 x coriander roots
  • 2 x teaspoons cumin powder
  • 2 x teaspoons coriander powder
  • 2 x teaspoons smoked paprika

I think you are right, and more flavour in the beans when you don't soak them.
