Magic Muffins

Method

Peel fruit and cut into large chunks and soften in boiling water for about 20 mins. They don't need to be really stewed just soft.

In a mixing bowl combine butter sugar flour, baking soda, then add in the molasses milk and eggs.

Drain the fruit and add to the mixture. Spoon into greased muffin trays and bake for 20 mins on 180ยบ.

Serve upside down.

  • 2 pears
  • 3 apples
  • 1/4 cup brown sugar
  • 1/4 cup dark molasses
  • 1 1/4 cup pearl barley flour
  • tsp baking soda
  • 2 eggs
  • 1/2 cup milk
  • 150gms butter
