Chicken wtih green olives and preserved lemon

I've been making this dish for a while but have just perfected a very fast mid week version.

Method

Slice the chicken in strips and set aside in a bowl with chopped garlic, sliced preserved lemon and roughly chopped olives. Add the pepper and half of the parsley and cover with some really good olive oil.

Marinate for a few minutes while you either have a shower, do your washing up or catch some news on the TV.

Place in a pan over a medium heat for about 10 mins. Add in the verjuice and the rest of the parsley and cover for a further 5 minutes. Then just let it sit with the cover on off the stove while you whip up a salad to go with it.

Mid week delight.

Ingredients

  • Serves two hungry working folk
  • 3 chicken thighs
  • 3 garlic cloves
  • 2 pieces preserved lemon skin off
  • 8 big fat green Sicilian olives
  • 1/2 tsp ground black pepper
  • dash of Maggie Beer's verjuice
  • dash of olive oil
  • half bunch flat leaf parsley
