For the best short crust pastry is it better to use your hands?

Method

Recently we discovered the lesson of making sure the butter was fridge-cold before beginning to make a short crust pastry. We used our hands and it turned out really well.

For the aficianados, is using your habds the go or is a mixer miles better?

if you have cold hands... otherwise a machine is good for keeping it consistent and keeping the temperature under control just make sure you rest it.
