Fish in the Paper

Yummo Fish oven baked to perfection in a paper parcel.
Method
Pre-heat oven to 180c
Heat Oil in pan. Add shallots, leeks and bring down for a couple of mins. Add potato and kumara to soften a little. Before it all burns throw in wine & verjus. Cover with a lid to allow it to cook without drying out. After 10 mins remove lid and allow to reduce slightly. Don't let the potato overcook cos it goes in the over..
Tear off 2 x 40cm lengths of baking paper..
Split spud mix over the two sheets and lay out salmon on top
Secure parcel so air cannot escape and put in oven on a tray for 12-15 mins.
Eat!!!

- 2 Shallots,
- 1 Leek
- 1 Waxy Potato, finely sliced
- 1 Small Kumara, finely sliced
- 1/2 cup white wine
- 1/2 cup verjus
- Coriander roots, diced.
- Splash of water
- Oil
- Tumeric
- Saffron
- 2 x Salmon Fillets
- Baking Paper
