Blackbean Pasta with Tuna, Fetta and Tomatoes

This recipe tastes amazing using other gluten-free pastas (rice, corn etc, not blackbean) and Danish fetta. The creaminess of the Danish fetta melts in the hot pasta and creates a type of sauce. The variation above is a little more dry and less palatable. (Sometimes you've just got to make do with the ingredients you have looming in the house!)

Method

1. Boil pasta according to packet instructions. While it's cooking, crumble the fetta, slice the tomatoes in half and drain the tuna, leaving about 80% of oil for use.

2. Once the pasta is cooked, place in bowl and add fresh ingredients as above. Add all remaining oil from tuna can for a more moist meal.

3. Toss all together, season with salt and pepper and eat!

  • Canned Tuna in Olive Oil
  • Fresh Grape Tomatoes
  • Salt and Pepper
