Crispy Tempeh Salad

Wednesdays is healthy hump day. This hits the spot.

Method

Was the lettuce and place in a large salad bowl. Chop the celery and place on top of the lettuce with the pinch of salt and lemon juice. Heat some oil in a pan till it is really hot and throw in the tempeh till its crispy. Use the same pan to warm up the almonds till they turn light brown add a tiny bit of soy sauce to this and put in the salad bowl with everything else.

Ingredients

  • one packet of tempeh
  • 4 garlic cloves
  • 1 bunch of dark green lettuce
  • 100gms chopped almonds
  • half bunch of celery
  • pinch salt
  • tablespoon of olive oil
  • juice of one lime
  • teaspoon
