Corn and Hollumi fritters

Corn and Hollumi fritters

Fresh and light, Just right.

Method

Combine all ingredients
Cook in pan, with minimal oil turn when unstuck
* oil not needed because of the hollumi cheese.
serve hot with a rocket, coriander and shallot salad. with a sauce made up of 1 tsp fish sauce, 1 tsp soy sauce, 1 tsp sugar, dash of sesame oil and 1 tbs vegetable oil

Ingredients

  • 2 cans of corn Kernels
  • 1 small chilli
  • small knob of ginger
  • 1 clove garlic
  • Coriander * keep some leaves for salad
  • 4 shallot stems *keep some for salad
  • splash of fish sauce
  • 1/2 a limes juice
  • 3/4 cup of rice flour
  • 1/2 cup plain flour
  • 1 tsp of baking powder
  • 100g of shredded hollumi
  • 2 eggs
