Pasta chicken tang!

Chicken marinated in coriander, onions, lime and garlic with pasta makes for yum lunch.

Method

In a blender put the coriander, lime juice, garlic, oil and and onion. Pulse till a fine mix. Slice the chicken into thin strips with the bacon and pour the mixture over. Marinate for at least an hour.
Boil up some pasta and heat some more oil in a pan, fry up the chicken mix for about 15 mins or until cooked through, it doesn't take too long. Mix the pasta through and serve with some shaved pecorino.

  • Per person
  • one chicken thigh
  • handful coriander stalks
  • juice of half a lime
  • slice bacon
  • garlic clove
  • 1/4 white onion
  • dash olive oil
  • pecorino for serving
