Tikka Masala Pizza!

Sooooo yummmy, more of a lemony taste then tandoori and something a little different. And quick too!

Method

Steps 1+2+3 can be done ahead of time
1. marinate chicken in tikka paste
2. Cook chicken in the oven at 180 degrees for approx.15mins - depending on size of pieces
3. mix yogurt with chutney to desired strength
4. assemble the pizza with tikka paste, chicken pieces, red onion and cheese and cook in oven for 5-10 mins until onion is cooked
5. finish with a mix of rocket and mint leaves and spoonfuls of the yogurt sauce.

Ingredients

  • Tikka Masala Paste
  • Organic Chicken pieces; the breast can be used but the flavour from the thigh is much nicer and cheaper too!
  • Naan Bread; you can use fresh or packet
  • Red onion
  • Fetta Cheese; i think goats feta works really well
  • Rocket
  • Mint
  • Greek natural yoghurt
  • Coriander and mint chutney; Should be able to buy it at your local indian grocer, i buy it in bulk and freeze it for extended use.
