Head cold remedy soup

Garlic has been known to reduce the length that a cold can stay in your body. This soup also involves all the goodness of broccoli and some potato for happy feelings.

Method

Heat some oil in a deep pot and fry up the onions and garlic and thyme till just brown. Add in the white wine and scrape the dark bits off the bottom of the pan. Chop the potato into small cubes and place in the pan and keep stirring. Next add in the broccoli roughly chopped with the stock. Let simmer with a lid on for about 15 -20 mins. When veg are soft put through a blender to make smooth and serve immediately.

Ingredients

  • one head of organic broccoli
  • one large pontiac potato peeled
  • 4 cloves of garlic finely chopped
  • 1 small red onion roughly chopped
  • 2 cups veg stock
  • 1/4 cup dry white wine
  • 6 or 7 sprigs of thyme leaves pulled
  • oil for frying
  • basil for garnish
