Deep fried tofu with fresh green dipping sauce

I'm not sure why I wanted to deep fry tofu tonight, but I did and it was good. This recipe is really quick and actually takes hardly any time and not much chopping. All hail the blender for good sauce making.

Method

Mix the shrimp paste with the eggs and put into a small bowl. n another bowl put the corn flour. Cut the tofu into bite pieces and dip into the egg mix then into the corn flour and put into a plate.

Heat the oil til you see bubbles and place each piece into the hot oil till they brown. Take out and put on paper towel to soak up the excess oil.

For the sauce get your good old blender out and put the roughly chopped ginger, garlic and coriander in there with the soaked chili in its juices. Blend on my friend and then just before you are done add in the soy and the fish sauce. Heat the sauce and cook through for about 3 mins in a pan. You don't need to do this but taking the edge off the raw garlic is a good thing at times.

Serve the tofu with the sauce and get your munch on.

Ingredients

  • For deep fried tofu
  • 300 gms hard tofu cut into bite sized pieces
  • 3 tablespoons shrimp paste
  • 2 organic eggs
  • 1/2 cup organic corn flour
  • 2 cups peanut oil for frying
  • For fresh green sauce
  • half bunch fresh coriander
  • 3 big garlic cloves
  • 1 inch ginger
  • 1 large dried chili soaked overnight in a bit of water
  • tablespoon dark soy
  • teaspoon of fish sauce

Gotta say... don't be fooled by the healthy nature of this. It is really heavy and will not let you sleep if you eat too many of the little suckers.
