Tandoori Pizza

this is the best pizza, if you want a vege version, swap the chicken for mushrooms & egg plant. Don't call Dominoes!
Method
Mix tandoori paste with yogurt, lemon juice & corander.
Marinate chicken fillets in mix for an hour, overnight or freeze in marinade so its easy when you have the pizza craving.
Grill or fry marinated chicken, chop into bite size pieces.
Turn oven on hot & heat pizza tray for crispy base.
Spread base with tomato passata mixed with a spoon of the marinade.
Distribute chicken pieces over the bases.
Add capsicum, shallots & cheese.
(NOW wrap one in cling wrap & freeze)
put onto HOT tray.
Cook in very hot oven until ready. (15 mins ish)
Sprinkle with mint and swirl yogurt in a spiral fom centre to edge
Ingredients
- 500g chicken fillets
- 2 big spoons of tanoori paste
- 1 big spoon of natural yogurt
- squeeze of lemon juice
- handful of chopped coriander
- 2 x pizza base
- tomato passata + marinade
- Natural yogurt (extra to serve)
- chopped capsicum
- chopped shallots or red onion
- chopped mint
- Bocconchini or mozzarella
