Pasta with mushroom sauce

Method
Heat some olive oil in a pan.
Chop onion and fry off in oil then add the sliced mushrooms and cook for a 5-10 mins on low-med heat.
Season with salt & pepper.
Add the tomatos and let simmer for approx 30-40 mins with lid on.
10 mins before the sauce is ready, cook the pasta in salted boiling water until al dente then drain.
Take sauce off the heat and add chopped parsley.
Stir sauce through pasta and serve with parmesan.

- mushrooms (portobello works well)
- 1x can of whole tomatos
- parsley
- parmesan
- pasta (fusilli or penne)
