Alex Adam's Vermicelli Noodle Salad

Method

Pour boiling water over the vermicelli noodles and leave them in the bowl to soften.
Cook prawns with crushed garlic until pink and leave to cool.
Run cold water over the noodles until cold, strain water and place in a large salad bowl. Add prawns, cucumber, lettuce, mint, coriander and chilli.
Combine all the ingredients for the dressing and pour over the vermicelli noodles.
Place peanuts, shallots and fried onion into individual bowls for people to add to their own salad.
*You can substitute the prawns with poached chicken or tofu.

Ingredients

  • • Packet of vermicelli noodles
  • • Green prawns
  • • 1 clove garlic chopped
  • • 1 small chilli chopped finely
  • • ½ small iceberg lettuce shredded
  • • 2 tbsp chopped coriander
  • • 2 tbsp chopped mint
  • • 1 diced cucumber
  • Place in small bowls for people to add their own
  • • Small bowl fried onion (can buy from Asian store)
  • • ½ bunch chopped shallots
  • • Small bowl crushed peanuts
  • Dressing
  • • 2 tbsp fish sauce
  • • 1 tbsp rice wine vinegar
  • • 1 tbsp soy sauce
  • • 1 tbsp grated palm sugar
  • • ½ squeezed lime
