Baked potatoes with sumac and carraway seeds

I'm perfecting this recipe, this time I threw in a red capsicum and then added a dash of cream at the end which made the most delicious sauce business. Not many left at a lunch for 16 hungry family members.

Method

preheat oven to 180 degrees celsius
mix all vegetables together and place in a large baking tray
sprinkle over all the herbs and seeds and mix through
stir through the dash of vinegar and oils
bake till golden brown - about 20 mins
serve with with any other dish or on their own

Ingredients

  • 3kg pontiac potatoes
  • one red capsicum finely chopped
  • 3 garlic cloves peeled and chopped
  • dash of red wine vinegar
  • dash of olive oil
  • half small handful of caraway seeds
  • small handful of sumac
