Chicken in Salsa Roja and Chia Seeds

As I have buckets of red salsa still left over from the last batch, I've been experimenting in cooking it with anything and everything. I needed a dinner high in protein tonight so opted for chicken and seeds. I used pepitas for crunch and chia for omega 3. Seeds are also a good source of protein.
Method
Chop up chicken thigh into thin slices, also slice up the spring onion and garlic and roughly chop the fresh tomato.
Heat the oil in the pan and fry the onion and garlic for a few minutes, add the chicken and when just turning brown add in the salsa and seeds. Cook for a further 5 mins and then add in the fresh tomato.
Serve on vermicelli noodles or rice and top with fetta.

- half bunch of spring onions
- 2 tablespoons pepita seeds
- 2 tablespoons chia seeds
- 2 tablespoons salsa roja
- oil for frying
- fetta for topping
