Salsa Roja

I made a quicker less fresh version of Salsa Roja, still tasty but definitely not as good as the first version. But it goes to show the flavour of these dried don't need much fuss to create a beautiful salsa to go with anything.

Method

soak all the chilies in a small bowl for an hour and keep the water, slice off the stalks and place the rest in a blender with all other ingredients, add in the water bit by but until you have reached your preferred consistency.

Serve alongside salsa verde for any Mexican dish

  • 2 x large mulato chilies dried
  • 2 x chipotle chilies
  • 1 x large red chilli
  • dash of oil
