Guacamole

I remember eating avocado as a kid and just putting salt and pepper on it. Then I tasted it how the Central American's made guacamole. And they were right.

Method

Finely dice the spanish onion, as fine as you can. Chop your coriander until it is almost liquid. Split open the avocado and pull the seed out, get a knife and slice it one way, then another, then another, then another until you have made a fine weave of the fruit. Now spoon it out of the skin and mix it with the onion and coriander. Roughly chop the tomato and stir inside the mixture. Mix through the lime juice.

Ingredients

  • three avocados
  • one tomato
  • juice of one lime
  • half handful of chopped coriander
  • one spanish onion
