Celery Leaf Summer Salad

The only way to sleep properly in this heat is to eat raw foods, anything hot and spicy or stewed will keep you awake all night.
Method
Grate the carrots and slice the cucumber and celery really fine, mix through with the celery leaves. Make a dressing with the other ingredients, by either smashing the ginger or grating it into the liquids. Pour over the salad and get crunchy.

- 2 x carrots
- 1 x cucumber
- half bunch of celery
- all the celery leaves
- small piece of ginger
- dash of red wine vinegar
- dash of olive oil
- dash of sesame oil
- juice of half a lemon or lime or orange
