Back to work breakfast

The holidays are over but that doesn't mean you can't still have a hearty breakfast. This is really super quick and full of protein to keep you going till lunch time.

Method

Whisk the eggs, parsley and milk together and pour mixture into the hot oil in the pan.
Toast the bread and flip the eggs as soon as they bubble.
Apply thick pieces of avocado to the toast and serve next to the eggs.

Ingredients

  • 2 x free range eggs
  • handful chopped parsley
  • peanut oil for frying
  • dash of organic milk
  • piece of wholegrain spelt toast
  • half an avocado
