Super Go Health Summer Salad

Why cook when you can get your salad on! I make a version of this salad whenever I have over indulged in rich foods for a few days. It is really cleansing, full of fibre and also has a good dose of protein.

Method

Clean all vegetables and chop, place into a large salad bowl and mix through the hummus. Slice up the bocconcini and Boil the egg for 4.5mins exactly and run under cold water before you peel. Cut into two and place in the middle of the salad along side the salted red cabbage.
Sprinkle the pepitas over the top and serve immediately.

Ingredients

  • Half a bunch of any green lettuce
  • 1/4 cup chopped parsley
  • one tomato - chopped
  • one carrot - sliced
  • 2 balls of bocconcini
  • 1/4 cup pepitas
  • a few teaspoons of salted red cabbage
  • 2 eggs
  • few dollops of good organic hummus with no additives
  • your best olive oil for the top
  • tin of sardines
