Radicchio, parsley and cornichon salad

I remember coming home from school and eating cornichons out of the jar till I got sick. With this easy recipe you don't have to be so crass, and the colours from the radicchio and parsley are beautiful.
Method
Mix all together and eat with anything or on it own
Ingredients
- 1 x radicchio
- half bunch of fresh flat leaf parsley finely chopped
- a dozen cornichons chopped up
- dash of red wine vinegar
- dash of good olive oil
