Hefty bird OSB

This beer won a bronze medal at the Ohio State Fair. 350 people entered this competition. The beer is an extra special bitter and the OSB stands for Ohio State Beer. It scored 34 out of 50 which is what i hoped it would get as professional beer rarely gets over 37.

Method

Heat 3 american gallons water to 160 oF. Put crystal malts in a muslin bag and steep for 30 min, remove. Boil and add extract, dissolve. Bring back to boil and add pearle hops, 45 mins later add EKG hops. After 50 min add honey and irish moss and after 59 min add tettnanger hops. Turn off flame after 60 min.
Put pan in a sink of water and add ice until beer mix is room temp (put hand on pan lid, if hot add more ice). Put 2 mamerican gallons of water in sterile fermenter and add beer mix, swirl. Add yeast and cap with sterile airlock.
Leave to fement for 8 days at 68 oF then siphon into sterile secondary fermenter cap with sterile airlock and leave for 5 days at 68-70 oF. Bottle as per hefty bird stout but only use 2/3 cup sugar when making syrup.

  • 250g crystal malt 40
  • 100g crystal malt 60
  • 100g crystal malt 80
  • 4.3 lb liquid malt extract
  • 2 lb dried malt extract
  • 3/4 lb local honey
  • 1 oz Pearle hops
  • 1 oz east kent goldings hops
  • 1oz tettnanger hops
  • 1teaspoon irish moss
  • California ale yeast

OMG. This is delicious. And Ive only got as far as bottling it.

I switched out the Pearle and the Tettnanger for some Fuggles and used some darker DME, but readjusted for colour and IBU so shouldnt be far off.

I cant wait for this baby to carbonate.

Better than the Rhesus Ruby I made.

Were calling it MHRA. Much Honey Real Ale. The honey comes from Much Hadham.

Gave a bottle of this to a long time beer drinker who I play poker with who then went on holiday with his family. His son recalls this conversation?:

'Grandad, what is your favourite beer ever?'
'Well, it used to be Hobgoblin, but now its Lee's beer'

Good luck ern. The beer that i tweaked from this recipe scored 38.5 / 50 at the 2012 state fair. It was better than this version but not as strong. I think i'm ready to medal again in 2013.
