prawns on avocado salsa

This entree looks great, tastes fab, & is a perfect Aussie dish that'll be a crowd pleaser!

Method

gently mix the avocado, tomato, capsicum, chilli, coriander, oil, onion, with sea salt & pepper. Pop a pile of salsa in a biscuit cutter on each plate (I used star shaped ones to represent the Southern Cross for Australian Day, but a circle would be easier!).
Dribble some basil oil in a circle around the salsa.
Cook the prawns for a few minutes on the barbie until golden & place carefully on top of the salsa.
ENJOY!!

Ingredients

  • 16 raw prawns
  • 2 avocados
  • 1 semi dried tomatoes, diced
  • 1 roasted capsicum, diced
  • 1 birds eye chilled, finely chopped
  • 1 tbsp coriander, chopped
  • 2 teaspoons red onion, diced
  • 2 tbsp lemon juice
  • 4 tbsp basil oil
